1/2 cup butter
-
3 eggs

1 cup milk
-
1 tsp vanilla extract
-
1 tbsp baking powder

-
1/4 cup powdered sugar

1 tsp vanilla
Topping:

1-2 cups shredded coconut
Instructions
-
Preheat oven to 350°F

Make the Cake Batter — Cream butter + sugar until fluffy. Add eggs one at a time. Mix in milk + vanilla. Fold in flour + baking powder
-
Bake — Pour into 2 8" Round Pans (Greased). Bake for 25-30 minutes. Tip: Let your cakes cool completely. Prevents your topping from melting.
-
Whip the Topping — Beat cream + sugar + vanilla until soft peaks form. Tip: Chill bowl for better whipping.
-
Assembly — Start your layers: Place 1 cake round, add a layer of your topping. Place your other cake round and cover the entire cake with remaining whipped topping. Press your shredded coconut into the whipped topping and cover the entire cake.
